Golden Raisin Bread

Recipe submitted by Valorie Harrison of Dinuba for the 1989 Visalia Farmers Market Harvest Cookbook.

Ingredients:

3 cups golden raisins

3 cups milk

6 cups flour

5 teaspoons baking powder

1/2 teaspoon baking soda

2 teaspoons salt

1 cup sugar

3 eggs, separated

3/4 cup shortening

Mix the raisins, milk, flour, baking powder, baking soda, salt and sugar, egg yolks and shortening in a large bowl until well mixed.

Beat the egg whites, and add to the mixture, folding in. Pour into a greased 9×13 baking dish.

Bake at 350 degrees for 45 minutes.
