Zucchini Nut Bread

Recipe from Ciera Farms.

Ingredients:

3 cups flour

2 cups sugar

1 tablespoon cinnamon

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

3 eggs

1 cup oil

2 teaspoons vanilla

2 cups grated zucchini

Optional: 1 cup nuts

How to Make:

Mix all dry ingredients except the sugar in a large bowl. In a medium bowl, beat the eggs until light and foamy, then add oil, sugar, zucchini and vanilla. Mix lightly but thoroughly.

Add wet ingredients to dry ingredients, then add the nuts. Bake at 325 degrees for 50 to 60 minutes. Makes two loaf pans.
