Zucchini Carrot Bread

Recipe from Ciera Farm.

Ingredients:

3 cups flour

1 1/2 cups sugar

2 teaspoons cinnamon

1 teaspoon nutmeg

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

3 eggs

1 cup oil

1 cup grated zucchini

1 cup grated carrots

Optional: 1 cup nuts

How to Make:

Mix dry goods except the sugar in a large bowl. Beat the eggs until light and foamy, add oil, sugar, zucchini and carrots. Mix lightly but thoroughly. Add dry to wet ingredients. Do not overmix. Add nut. Bake at 325 degrees for 50 to 60 minutes. Make two loaf pans.
