3 to 5 strips of bacon

1 large bell pepper, finely chopped

1 onion, finely chopped

Optional: Garlic and salt and pepper, to taste

2 1/2 cups of eggplant, peeled and cubed

2 1/2 cups of chopped tomatoes

Shredded cheese

Optional: 1/2 pound of sausage, chicken or hamburger meat

How to Make:

Fry the bacon until its crisp. Remove bacon and use the drippings of bacon to cook bell pepper and onion to almost done. Add salt and pepper, if desired.

Add grated cheese to top off the pan. Let stand until the cheese melts, crumble bacon over the top of the cheese. Serve!
