Lemon Zucchini Nut Bread

Recipe from Ciera Farm.

Ingredients:

1 cup whole wheat flour

1 cup all purpose flour

2/3 cup sugar

1/4 teaspoon nutmeg

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 egg and 1 egg white

1/4 cup oil

1 teaspoon vanilla

1 tablespoon lemon zest

1 cup grated zucchini

1/4 cup plain yogurt

How to Make:

Mix dry ingredients in a large bowl. Beat eggs until light and foamy, add oil, yogurt, zest, zucchini and vanilla. Mix lightly but thoroughly. Add dry to wet ingredients, then add nut. Bake at 350 degrees for 55 to 60 minutes. Makes one loaf pan.
