Recipe from Gaile Certini of Visalia, submitted for the 1989 Visalia Farmers Market Harvest Cookbook.


1/3 cup mild flavored honey

1/4 cup fresh lemon juice

1 cup water

8 fresh peaches (about 2 pounds)

How to Make:

Mix together honey, lemon juice and water.

Wash peaches, quickly dip in and out of boiling water and slip the skins off.

Cut in halves and remove the pits. Arrange peach halves in a two quart casserole dish.

Pour honey mixture over the peaches and cover.

Bake for 30 minutes in a 350 degree oven or until tender. Serve warm or cold with or without light cream or ice cream.
